Too Many Green Tomatoes
My garden has been good to me, but we have all sorts of green tomatoes. I like fried green tomatoes, but not that muchWe are trying to ripen the tomatoes in brown paper bags. Some of the tomatoes are coming along, but some are taking forever to ripen. I did get to try some of my cucumbers proably about 10 of them. The brussel sprouts did not wear so well. If I plant them again, I will make sure they are in a bigger pot.
Does any one have any suggestions to how to either use green tomatoes or how to ripen tomatoes? Does anyone have a recipe for something other then fried green tomatoes for green tomatoes? I want to freeze some of them.

My wife made a jelly with them. I don’t recall the exact recipe, but we had to boil the tomatoes, skins and all, for 20 minutes, then you added sugar and a jello mix. We then put them in jars and stored them in the freezer. It was actually very tasty. Sorry I forgot the recipe, if I do find it, I’ll come back and share it with you.

Hi!
Place the green tomatoes in a sunny window . That’s what my Dad does and it works ,they will turn red
Just make sure they don’t over heat in the sun

Hi, We’ve made green tomato pickles in years past. They are a sweet pickle and taste delicious. If you are interested, I will get the recipe for you. Take care, Wanda

You can freeze them and then put them in a blender with cucumbers and bell peppers any time of the year. It is the best tasting vegetable shake I have come up with so far.

I meant to say you can store them in the freezer. I never tried my blender out on a frozen green tomato, but I don’t think it would be a good idea.
