Menu Ideas for Marvelous Menu

Here’s some simple to make menus for someone with a chronic illness. Hope you all enjoy them.

Barbecue Chicken, corn on the cob and mashed potatoes, and chocolate cake with vanilla ice cream
Refried bean with mexican cheese buritos, cinammon chips
Spaghetti with meat sauce, garlic bread and chocolate pudding with whipped cream
Eggs, toast, tomato and blue berry muffins
Chef Salad with croutons and salad dressing


Hot House Tomatoes Anyone?

Our tomatoes didn’t grow very well this year. They were mushy on the outside, but not ripe on the inside. I cannot figure out why the crop did so badly this year. It’s hard enough planting the tomatoes having a chronic illness without the tomatoes tasting like hot house. It’s something I really enjoy so it was a huge disappointment. I need to figure out what I can do to have better success with my tomatoes in the pot. I did notice a lot of spider webs on the plants all the time.  When I found them I would knock them off, but the spider didn’t quite spinning their webs. I did get bit by a spider so it made me gun shy.

English trifle that my family makes at christmas time. It’s nmade with jello, pound cake, bannana or vanilla pudding, whip cream, fruit cocktail and vanilla waffers. I usually reserve the cherries to decorate the top. It’s a labor of love because it brings back some great memories.

Pizza Nightmare

It seems that my dinner was doomed for the night. We don’t order pizza much because of money issues. So tonight’s dinner turned into a disaster. After an hour and half I called Papa John’s about the Pizza. Well they messed up and put the order to be carry out rather then delivery. This was even after I gave them my address and credit card information. The pizza companies around here don’t take checks anymore. Well the pizza finally showed two hours later and it was ice cold. Well I’m pretty irritated about the pizza. And yes even after two hours late I still had to pay the whole price for the pizza. I didn’t call the pizza company yet, but I plan on Monday. I relise errors happen, but it was obvious the pizza had been sitting aroung for the whole time and it was ice cold. Needless to say I am done with Papa John’s Pizza. Its one thing to be late, but its another this to bring me ice cold pizza and the garlic butter was all clumped up. Once I speak with the company I will update in a later post, but right now I am really mad.

A Smooth Day in Homeschooling with Lupus

We finished school early today and it was great. My daughters attention was really good so we were able to move throught everything smoothly. At lunch time she usually takes the dog for a walk and I think that helps her regroup and changes her focus. The dog needs to walk as he is over weight. We have been struggling to lose his weight. We get some of the weight off and then the weight is right back on him. We just can’t win with this. He is constantly wanting more and more food.

How Sugars Lands on Our Tables

Most of us use a lot of sugar in our food, but most of us don’t know how the sugar gets on the shelves. Brazilian Sugar is the largest manufacturer of sugar. The majority of consumer sugar is Icumsa 45 Sugar. This kind of sugar is the safest kind of sugar for people to consume. The color of the sugar decides on the quality of sugar. Some sugar is brown and other sugar is white. It’s both light and dark colors. The sugar has to go through a long process of refining before it reaches our kitchens. Sugar is made from sugar beet or sugar cane. Our sugar goes through a long process of testing to make sugar its safe for us to eat. The sugar prices keep going up and up, so its interesting to know how the sugar goes through to reach our dinner plates. Sometimes knowing how the sugar is manufactured you can appreciate it more.

Savory Deviled Eggs By The Dozen

This is the first of many recipes specially made for those with chronic illness, and those that have no patience with cooking. I consider myself in both categories. Cooking isn’t my cup of tea, even though I’ve been told I can cook.

1 dozen eggs
10 dill pickles or tablespoon pickle relish
1 tablespoon mayonnaise
1 teaspoon sugar (omit if using pickle relish)
Dash of worchester
1/2 tsp salt
1/4 tsp pepper
Paprika
1 teaspoon mustard of choice

Boil the eggs with plenty of salt for easy peeling.
Slice each egg in half and remove yolk. Break up egg yolks in medium size bowl. Chop up pickles/pickle relish in a food processor or finely chop them. Add mayonnaise, mustard, worchester, salt, pepper, and chopped pickles. You can add extra mayonnaise to taste. Mix up well. Spoon the egg mixture into each egg half. Then garnish with paprika
